An African-American ancient species from the 19th century, first bred in Philadelphia and Baltimore, it is thought to have arrived in America from Africa around 1800. These peppers have been used since the early 20th century to make the famous Chesapeake Bay spice blend. Peppers were also dried and used as an ingredient in creamy sauces served with seafood. Hence the name Fish Pepper. The white pods are also used in soups where red chilies would make the soup cloudy. As an ingredient, they never appeared in cookbooks; they were simply part of local tradition.

It has a distinctive taste. Not like a “smoky” habanero or fruity like “Aji Limon,” but it has a subtle sweetness that emerges with notes of lime or pineapple juice.

They are moderately spicy, although their spiciness varies, and are similar to cayenne pepper. They also become milder when cooked, and one fruit is enough to flavor a few meals. They are used in cooking and are especially suitable as chili powder or added to various sauces.

Today, “Fish Pepper” are equally popular for their ornamental value and for the ease of growing them, especially in pots. The leaves with white-green spots derive their unique appearance from the same recessive genes that cause vitiligo. This results in an interesting combination of multicolored stripes that permeate the colorful fruit, not found in other varieties. When ripe, they turn to full red, therefore they are collected in different stages, when they are green, white stripes predominate, then the fruit has the most interesting and unique taste.

A legend says Fish Pepper comes from seeds planted in a fit of rage.
