The edible part of this Malay Medium-early chicory are the leaf heads obtained by forcing the roots harvested in the fall. The leaves have a slightly bitter taste. The intibine present stimulates appetite and digestion. Especially in winter, it is a source of vitamins and mineral salts. Requires deeply tilled soil. The forced roots, if healthy, should be about 3-5 cm in size. Chicory roots are harvested from September to November, before frost, and then stored. Then from November to early spring, it’s a rush to store everything. This is important because the taste and appearance of the chicory depend on it. The roots are covered with a layer of sand or they are put in dark bags.
