These Carolina Reaper seeds come from the Carolina Reaper plant. The Carolina Reaper is a cultivar (blend) of chili peppers officially called “HP22B” grown by Ed Currie, who runs the PuckerButt Pepper Company in Fort Mill, United States. The Carolina Reaper has long been the hottest pepper in the world in the Guinness Book of Records but has since been overtaken by Pepper X, also grown by Ed Currie.
The Carolina Reaper averaged 1,569,300 SHU on the Scoville scale, with records exceeding 2,200,000 SHU.
The previous record holder was Trinidad Scorpion Butch.
The Carolina Reaper has a distinctive bright red color and a “stinger,” a bee-like sting at the base of the pepper. There is also a Chocolate Reaper version.

Use of Carolina Reaper
Since the Carolina Reaper is so intensely hot, it is mostly used to incorporate into sauces and chili powders. This way you can control the spiciness a bit more by mixing it with other ingredients and chilies, for example. For example, it is widely used, mainly in the United States, in fermented sauces since fermentation slightly flattens out the spiciness and makes the flavor a bit more rounded and full-bodied. Furthermore, Carolina Reapers are also widely dried to make chili flakes or chili powder. Also this way you can control the spiciness in your dishes a little better than with whole peppers.
When using or processing these peppers, be careful and wear gloves and a mask if necessary. Also make sure there is exhaust ventilation and that no children are around as the fumes can cause a lot of respiratory irritation during processing.
