The Bird’s Eye Chili seeds produce the Bird’s Eye Chili plant. Bird’s eye chilies are small, thin, pointed peppers that are red when ripe. They are green when unripe but can still be eaten, and are sometimes orange or purple, depending on ripeness. In the case of Thai cuisine, green peppers are usually used in green curries, while the hotter, ripe red peppers are used in red curries.
When fresh, they often still have a stem and contain loose, edible seeds that are particularly spicy. The peppers are affordable due to their low weight and can be used whole, sliced or seedless and diced.
Bird’s eye chili peppers are widely used in Thai, Vietnamese, Malaysian and Indonesian cuisine. Fresh or dried chili peppers are added to salads, stir-fries, curries, sauces, sambals, soups and marinades. The stems are removed and the chilies can be eaten whole, sliced, diced, chopped or mashed. The seeds are particularly spicy and can be removed for less intense heat.
