The name Jalapeño comes from the Mexican town of Xalapa (also spelled Jalapa) in Veracruz, where it was traditionally grown

Marinated jalapenos, sliced or whole, are a key ingredient in nachos and many other traditional dishes in Mexican cuisine.

Chipotles are smoked ripe Jalapenos. The fruit is kept on the bush as long as possible until it turns deep red and loses much of its moisture, at which point it is harvested for chipotles, which are often a key ingredient in many dishes in Mexican cuisine. It is a mild spice and earthy condiment, usually used in a variety of sauces and in combination with other marinades and seasonings.
