Celeriac Maxim is a variety of celery intended for the late fall harvest. The fertility and superior quality of the tuber, which is ripe, bulbous and rich in aromatic oils, are the main advantages of this celeriac. The flesh of the roots is sweet, delicate and not spicy; it has a creamy white color and a creamy brown skin. Vitamin C, calcium, magnesium, potassium and phosphorus are especially important in autumn and winter and are present in celeriac in good amounts. Therefore, celeriac is also a tremendously fine addition to your vegetable garden.
The seeds of this celeriac Maxim are sown from early to late spring in propagators, greenhouses or other glass-covered containers. After the end of the spring frost, after icy days, seedlings should be planted in the soil of your vegetable garden. Celery Maxim requires a soil that is moderately heavy, but not waterlogged, rich in humus, constantly moist and at the same time not acidic. Between September and November in the fall, the roots, or tubers, are ready for harvest. They are excellent for storing or freezing. You can also easily pickle them and, of course, use them fresh in dishes such as pea soup or stews.
