The Anaheim is a pepper closely related to Mexican cuisine. In New Mexico, they are often referred to simply as “chili” because they are ubiquitous there. They were created more than 100 years ago by Dr. Fabian Garcia in New Mexico. He was looking for a chili that was bigger, meatier and milder. Soon after, the pepper was named “Anaheim” when farmer Emilio Ortega brought these seeds to the Anaheim area of California.
Anaheim has large fruit with mild, subdued spiciness and is used in Mexican and New Mexico cuisine. Green Anaheim are used in the traditional Mexican dish “chile relleno” (stuffed with chili). They are used in cooking at any stage of maturity, but are usually used when they are still green and unripe.
They are used in the form of fresh, both green and red ripe fruits, roasted, dried and also preserved. They are suitable for vegetarian dishes, vegetable dishes, sauces, salads, soups and stews.
Anaheim is one of the mildest varieties of hot pepper; when ripe, it is called “Chile Colorado,” “California red chile” or “California pepper.” On the other hand, unripened chilies are called “California Green Chilies.”
